Happy Tuesday guys! Recipe of the day is Mexican Breakfast Potato Skins with crispy chorizo, quail eggs, cheese and all the extras. 🤤
Not only these Mexican Breakfast Potato skins are just perfect for breakfast, but they’re also delicious for snacks, appetizers and canapes. It takes minutes to cook them and the recipe calls for just a few basic ingredients.
What you need:
- potatoes
- quail eggs
- chorizo
- Monterey Jack cheese
- avocado
- hot sauce
The first thing you need to do is bake the potatoes. I used my air fryer but oven is fine as well. Make sure to take them out a few minutes before they’re actually cooked. Bear in mind that you’ll cook them again, once you fill them with the good stuff.
I’d use spicy chorizo if ti wasn’t for the kids. I think it gives so much flavour and a nice kick to the dishes. As for the quail eggs, if they’re not available, substitute with a chicken egg, it’s absolutely fine.
Mozzarella cheese would work fine, as well as Cheddar.
These Potato Skins are best served hot, melted cheese and crispy chorizo, you know, but you can store them for a couple of days and reheat, if needed.
It’s really important how you’ll serve them – add some sliced avocado, hot sauce/salsa,may be fresh lime and sour cream.
Here’s how to make these delicious Mexican Breakfast Potato Skins
Ingredients:
- 3 medium potatoes, baked
- 8-10 quail eggs
- 150g Chorizo, diced
- 150g Monterey Jack cheese, grated
- 1 ripe avocado, sliced, for serving
- hot sauce for serving
Preparation:
- Scoop out the potatoes and mash the insides. Combine with the grated cheese and season with salt and pepper.
- Fill in the potato skins with the cheese and mash potatoes, add a couple of quail eggs and diced chorizo and cook in the air fryer for 20 minutes. Of course, you can cook them in the oven, I’m just obsessed with my air fryer. 🤪
- Serve with the sliced avocado and some hot sauce, if wished.
