Happy Wednesday guys! Recipe of the day is Air Fryer Lamb Chops Mediterranean Style – succulent and juicy lamb cutlets served on a bed of herby bulgur wheat.
What you need:
- lamb chops
- pita bread
- olive oil
- salt and pepper
- lemon juice
- bulgur wheat
- tomatoes
- coriander
- mint
- raita
We just got our Air Fryer a week ago and I am so pleased with it. I was a bit sceptical in the beginning, but I have to admit, it’s been amazing so far. No oil, just a tiny drop, but the food is juicy and succulent and obviously so much healthier. I’m using the Ninja Air Fryer (hubby’s choice). 🙂
Here’s how to prepare these beautiful Air Fryer Lamb Chops Mediterranean Style
Ingredients:
- 1kg lamb chops
- 1/2 lemon, juice only
- 2tbsp olive oil
- salt and pepper to taste
For the Herby Bulgur Wheat:
- 200g bulgur wheat, cooked
- 2 ripe tomatoes, diced
- a bunch of fresh coriander, chopped
- a bunch of fresh mint leaves, chopped
- 1 lemon, juice only
- 1tbsp olive oil
- salt to taste
Preparation:
- Marinade the lamb chops with olive oil, lemon juice, salt and pepper and leave in the fridge for couple of hours.
- Meanwhile, make the bulgur wheat – in a bowl, simply combine it with the herbs, tomatoes, olive oil and salt. Mix well.
- To cook the lamb chops in the air fryer – arrange them in the basket and cook for 20 minutes at 200°C. Make sure to turn them at least once or twice so they stay juicy and are evenly cooked.
- To assemble the dish, on a pita bread, spread 1tbsp of raita, then 2-3tbsp of the Herby Bulgur Wheat and arrange a couple of Lamb chop on top. Serve hot!
