Happy Sunday guys! Recipe of the day is Pimientos con Bacalao/Stuffed Peppers with Cod – a truly delicious recipe from beautiful Spain!
What you need:
- marinated red peppers
- cod fillets
- butter
- flour
- milk
- parsley
- salt and pepper
For the tomato sauce:
- tomato passata
- garlic
- sugar
- olive oil
- thyme
Here’s how to make this delicious Pimientos con Bacalao/Stuffed Peppers with Cod
Ingredients:
- 3 cod fillets, bones removed
- 7-8 marinated red peppers
- 3tbsp flour
- 50g butter
- 200ml milk
- salt and pepper to taste
- a handful of fresh parsley, chopped
For the tomato sauce:
- 200ml passata, 1tbsp sugar
- 1tbsp olive oil
- 1tsp garlic powder
- 2tsp dry thyme
- 1tsp salt
Preparation:
- Start by soaking the marinated peppers in water for 20 minutes. Drain and tap dry.
- Heat a pan with the butter and gently sweat the onion for 2-3 minutes. Add the cod pieces and cook for about 5 minutes, stirring constantly. Add the flour, mix well and then gradually add the milk. Mix well until smooth and creamy consistency. Season with salt and pepper and stir in the fresh parsley. Leave on a side to cool down.
- To make the tomato passata – pour it into a pan, add the olive oil, sugar, thyme and garlic and cook for about 10 minutes on medium heat, stirring constantly. Season with salt and leave on a side.
- Stuff the peppers with the cooked cod. If wished, heat them up before serving.
- To serve – add the tomato sauce and arrange the Pimientos con Bacalao on top. Drizzle with tiny bit of yogurt, if you fancy.
