Happy Tuesday guys! Recipe of the day is Best Lemon Drizzle Cake – super easy to make and literally melts in your mouth.
Not only this cake is amazingly delicious, but it is one of the easiest cakes to make, anyone could make it. It uses just a few basic ingredients – flour, eggs, butter and sugar and lemons, of course. It tastes fresh and indulgent at the same time. I’m not big fan of the icing so you can skip that and may be serve it with a bit of clotted cream or even ice cream, why not! 🙂
Wee all loved this Best Lemon Drizzle Cake and it definitely is now on our top favourite list for quick, easy and delicious cake. The kids particularly enjoyed it, requesting it not only for dessert but for breakfast and snack, too. 🙂
What you need:
- self raising flour
- eggs
- butter
- lemons
- baking powder
- sugar
Here’s how to make this lovely Best Lemon Drizzle Cake
Ingredients:
- 180g self-raising flour
- 180g butter, softened
- 180g caster sugar
- 3 large eggs
- 1tsp baking powder
- 1 lemon, zest only
Preparation:
- Preheat the oven to 180°C.
- In a bowl, combine all dry ingredients and in a separate bowl, mix the wet ones. Add the dry ingredients to the bowl with the wet ones and combine well.
- Grease a loaf tin and pour the mixture in. Bake in the oven for about 40 minutes.
- Make the glaze by combining the sugar and lemon juice and pour over the cake while still hot.
