Happy Monday guys! Today’s recipe is Beetroot & Whipped Feta Muffins – one of my tastiest savoury muffin recipes, for sure!
What you need:
- flour
- baking powder
- beetroot
- garlic powder
- eggs
- yogurt
- feta cheese
- mayo
Ok, I have to admit these are now my favourite savoury muffins and probably one of my favourite recipes with beetroot. No exaggerating here, they’re seriously good. 🙂 Really simple but just gorgeous. Adding the whipped feta on top is a must! You could cook the beets in advance if you prefer and store in the fridge.
Here’s how to make these beautiful Beetroot & Whipped Feta Muffins
Ingredients:
- 2 medium sized beetroots, peeled and roughly cut into pieces
- 250g plain flour
- 1tsp baking powder
- 100ml yogurt
- 2 eggs
- 1tsp garlic powder
- 50ml rapeseed oil
For the Whipped Feta:
- 200g feta cheese, crumbled
- 1tbsp mayo
- 150ml yogurt
Preparation:
- Preheat the oven to 200°C. Place the beetroot pieces on a tray, drizzle a tiny bit of rapeseed oil and season with salt. Bake in the oven for about 20 minutes turning them over halfway.
- Once cooked, leave to cool down.
- In a bowl, combine all the dry ingredients.
- Once the beetroot is cool, blend it with the yogurt to a smooth consistency. Add the eggs and gradually start adding the dry ingredients. Mix well.
- Pour the mixture into a greased muffin tray and cook in the oven for about 20 minutes.
- To make the whipped feta, simply blend the ingredients together. The mixture should be thick, not runny so you can decorate the beetroot muffins.
- Once they’re cool, use a piping bag to decorate them with the whipped feta.
