Happy Monday guys! Today’s recipe is Blackberries & Wild Strawberries Pie – a lovely bake I made a week ago, dead easy and absolutely delicious!
I hope you guys are all enjoying your Summer and the beautiful produce it has to offer. I’ve been visiting my local farmer’s market and can’t get enough of the colours, aromas and the beautiful local Summer produce. On my last visit, apart from other veggies, fruits and herbs, I picked up some wild berries, freshly picked the night before from the mountains. They were just beautiful – fresh and crisp with a touch of tanginess. The kids ate half of them and I used the other half to make this beautiful Wild Berry Pie.
What you need:
- blackberries
- wild strawberries
- butter
- sugar
- eggs
- baking powder
- self-raising flour
- vanilla extract
- vanilla ice cream for serving
Here’s how to make this gorgeous Blackberries & Wild Strawberries Pie
Ingredients:
- 140g self-raising flour
- 140g caster sugar
- 140g butter, softened
- 2 eggs
- 1tsp baking powder
- 100g blackberries
- 100g wild strawberries
- 1tsp vanilla extract
- vanilla ice cream or frozen yogurt for serving
Preparation:
- Preheat the oven to 180°C.
- In a bowl, whisk the sugar and butter until creamy. Add the two eggs and flour, vanilla extract and baking powder and whisk again.Gently fold in the wild berries.
- Empty the mixture into a greased baking tray and bake in the oven for about 25 minutes. Leave to cool.
- Serve with some frozen yogurt or vanilla ice cream and some extra berries on a side for the perfect summer dessert!
