Happy Wednesday guys! Recipe of the day is Red Pepper & Olive Oat Muffins – savoury bites with Parmesan cheese, sweet peppers & olives.
These small bites are perfect for a picnic or as a snack on the go whenever you feel the hunger. They are super yummy and made of oats and wholewheat flour which makes them quite filling and healthy.
I used mixture of olives for a bit more flavour (and colour) and red peppers from a jar. Just make sure to rinse the pepper thoroughly as some jars can be quite sour.
What you need:
- oats
- wheat flour
- eggs
- mixed olives
- red peppers
- Parmesan cheese
- yogurt
- salt
- baking powder
Here’s how to make these delicious Red Pepper & Olive Oat Muffins
Ingredients:
- 200g oats
- 100g wholewheat flour
- 100ml rapeseed oil
- 1tsp baking powder
- 1tsp salt
- 80g Parmesan cheese, grated
- 10-12 olives, mixed, stones removed
- 1 red pepper, thinly chopped (I used from a jar)
Preparation:
- Preheat the oven to 190°C.
- In a bowl, combine the wholewheat flour, oats, baking powder and salt. Add the rapeseed oil and eggs and mix well.
- Finally, stir in the Parmesan cheese, olives and red peppers.
- Pour the mixture into a muffin tray and bake in the oven for about 25 minutes or until ready.
- Let them cool a bit and serve.
