Happy Wednesday guys! Recipe of the day is Dark Chocolate Pistachio Cheesecake – rich and indulgent, oven-baked cheesecake with lots of pistachios! 🙂
What you need:
- eggs
- cream cheese
- pistachios
- dark chocolate
- double cream
- butter
- digestive biscuits
- sugar
As much as I love the convenience of no bake cheesecakes, I have to admit, the baked ones are a whole different game. The taste is much more intense and different, to me. The steps are almost the same, except for the baking part. If you haven’t tried a baked cheesecake yet, I’d strongly recommend, it’s delicious. 🙂
Here’s how to make this delicious Dark Chocolate Pistachio Cheesecake
Ingredients:
For the filling:
- 250g pistachio nuts, shells removed and thinly chopped
- 400g cream cheese
- 120ml sour cream
- 3 eggs
- 3 egg yolks
- 150g sugar
For the base:
- 200g digestive biscuits, crushed
- 80g butter, melted
Fort the topping:
- 100g dark chocolate, broken into pieces
- 100ml double cream
- chocolate candies, for decoration
- pistachio nuts, for decoration
Preparation:
- Preheat the oven to 170°C.
- Combine the biscuits and butter together and press them down into a 23cm tin, covered with baking paper. Refrigerate while making the filling.
- In a bowl, mix the sour cream, cream cheese, sugar, eggs, eggs yolks and pistachio nuts till a smooth consistency. Place on top of the biscuit layer and cook in the oven for about 50 minutes. Take out of the oven and let it cool.
- Melt the dark chocolate and double cream until smooth and creamy. Let it cool and thicken. Decorate with the ganache ,pistachio nuts and candies. Refrigerate overnight.
