Happy Thursday guys! Recipe of the day is Sticky Tofu & Cauliflower Bowl – delicious vegan option that is super quick & simple to make.
This lovely bowl is perfect for a lunch or dinner. To make it more filling and nutritious, try adding some soba noodles or basmati rice.
What you need:
- organic tofu
- cauliflower
- sesame seeds
- soy sauce
- tomato paste
- vinegar
- brown sugar
- chilli powder
- garlic powder
- salt and pepper
- extra fresh chillies, for serving
Here’s how to make this delicious Sticky Tofu Cauliflower Bowl
Ingredients:
- 200g organic tofu, cut into cubes
- 1 small cauliflower, broken into small florets
For the Sticky Tofu marinade:
- 2tbsp tomato paste
- 2tbsp soy sauce
- 1tbsp brown sugar
- 2tsp vinegar
- 2tsp chilli powder
- 1tsp garlic powder
- salt and pepper
- sesame seeds for sprinkling
For the Cauliflower dressing:
- 1tbsp rapeseed oil
- 1tsp lemon juice
- salt to taste
Preparation:
- Whisk the marinade ingredients in a bowl and gently coat the tofu pieces evenly. Cover with cling film and refrigerate for a couple of hours.
- Preheat the oven to 180°C and arrange the tofu on a baking tray, covered with baking parchment.
- Bake in the oven for about 20 minutes, turning them halfway and brushing them with the marinade leftovers. Take out of the oven and while still warm, sprinkle the sesame seeds on top.
- In a separate bowl, drizzle the cauliflower florets with the dressing ingredients and mix well.
- In a serving bowl, arrange the cauliflower on one side and the tofu on the other. Sprinkle some fresh chillies and some pesto, if you’d like (I had some leftover parsley pesto which was just perfect with the cauliflower).
