Happy Friday guys! Recipe of the day is Crispy Cauliflower Tortilla Bowls – quick, easy and super delicious recipe that also happens to be vegan.
What you need:
- cauliflower
- chilli powder
- honey
- soy sauce
- Worcestershire sauce
- garlic powder
- vinegar
- avocado
- onion
- coriander
- cabbage
- carrots
- tortilla wraps
- fresh chillies for serving
- olive oil
- salt
Here’s how to make this yummy Crispy Cauliflower Tortilla Bowls:
Ingredients:
- 2-3 tortilla wraps
- chopped fresh chillies for serving
For the spicy cauliflower marinade:
- 2tbsp chilli powder
- 1tbsp honey
- 2tbsp soy sauce
- 1tbsp Worcestershire sauce
- 1tsp garlic powder
- 1tsp vinegar
- 1tsp salt
- 1tsp pepper
For the cabbage salad:
- 200g white cabbage, shredded
- 1 carrot, shredded
- 1tsp olive oil
- 1tsp vinegar
- salt to taste
For the avocado:
- 1 ripe avocado, mashed
- 1/2 red onion, chopped
- a sprinkle of fresh coriander, chopped
- 2tsp lime juice
- salt to taste
Preparation:
- To make the crispy tortilla bowls, preheat the oven to 200°C. Place them directly on the rack for a couple of minutes on each site. Take them out from the oven and place them in a bowl and putting another smaller bowl on the top, pressing gently. This will shape up the tortillas in bowls.
- Combine the marinade ingredients and mix in the cauliflower florets. Refrigerate for 30 minutes.
- Preheat the oven to 200°C. Grease a baking tin with some olive oil and bake the cauliflower for about 20 minutes. Make sure to turn it regularly and brush some more marinade.
- In a bowl, combine the ingredients for the avocado and season with salt.
- In a separate bowl, mix the cabbage salad with the olive oil, vinegar and season with salt.
- To build the bowls – add the smashed avocado at the bottom and then sprinkle some of the cabbage salad.
- Finally, add the cauliflower florets. If wished, drizzle your favourite sauce and sprinkle some freshly chopped chillies.
