Happy Sunday guys! Recipe of the day is Peanut Butter Banana Roulade, made with overripe bananas, chocolate ganache and fresh strawberries.
What you need:
- ripe bananas
- eggs
- egg whites
- flour
- sugar
- baking powder
- bicarbonate of soda
- peanut butter
- chocolate
- double cream
- strawberries
- powder sugar
Here’s how to make this fantastic Peanut Butter Banana Roulade
Ingredients:
- 180g flour
- 2 eggs
- 3 egg whites
- 140g sugar
- 3 overripe bananas, mashed
- 1tsp bicarbonate of soda
- 1tsp baking powder
- 1tsp vanilla extract
- fresh strawberries for decoration
For the filling:
- 120g peanut butter
- 120ml double cream
- 1tbsp sugar
For the chocolate ganache:
- 120g milk chocolate
- 120ml double cream
Preparation:
- Preheat the oven to 180°C.
- In a bowl, whisk the egg whites till peaks start forming and gradually add the sugar.
- In a separate bowl, combine the flour, bicarbonate of soda and baking powder.
- In another bowl, whisk in the eggs and vanilla extract.
- Add the flour to the egg mixture, mix well and fold in the egg whites.
- Cover a baking tray with greased baking parchment spread the mixture evenly on top and bake in the oven for about 15 minutes. Leave to cool.
- To make the filling – in a bowl, whisk the peanut butter, double cream and 1tbsp of sugar until thick so you can spread it on the roulade.
- For the ganache, simply melt the chocolate ad cream together and leave on a side to cool and thicken.
- Spread the filling evenly on the banana roulade and using a tea towel gently roll it up. Wrap it up in foil and refrigerate for a couple of hours.
- Remove from the fridge, unwrap and using a piping bag with the ganache decorate the roulade. Add some fresh strawberries and powder sugar and serve.
