Happy Monday guys! Today’s recipe is Sticky Toffee Pudding – an indulgent treat, perfect for the festivities.

This pud is so simple and yet so rich and indulgent, it would be just ideal for a festive dessert. You can make it a few days ahead and then on the day, simply make the toffee sauce. That would save a lot of time and stress. 🤪
What you need:
- plain flour
- dates
- brown sugar
- butter
- eggs
- bicarbonate of soda baking powder
- double cream
- hot water
- black treacle
Here’s how to make this fantastic Sticky Toffee Pudding
Ingredients:
- 150g plain flour
- 2 eggs
- 70g butter, softened
- 200g dried pitted dates
- 50g brown sugar
- 2tbsp black treacle
- 2tsp baking powder
- 1tsp bicarbonate of soda
- clotted cream for serving
For the Toffee Sauce:
- 200ml double cream
- 1tbsp black treacle
- 125g butter
- 200g brown sugar
Preparation:
- Add the dates and bicarbonate of soda in a bowl and cover with hot water for about 20 minutes.
- Preheat the oven to 180°C.
- In a bowl, beat the butter and sugar and add the eggs one by one. Gradually add the flour and baking powder and mix until the mixture is smooth.
- Drain the dates and mash them with a fork. Mix them into the pudding batter.
- Pour the mixture in a cake tin, line with greased baking parchment and bake in the oven for about 40 minutes. Remove to cool.
- Meanwhile, make the toffee sauce – in a saucepan, over low heat, melt the butter, double cream, sugar and treacle. Once the ingredients are incorporated, remove from the hob.
- Prick the pudding with a cocktail stick all over. Pour the sauce on top and spread evenly and let it rest for 20 minutes.
- Serve with some clotted cream or double cream.
