Happy Wednesday guys! Recipe of the day is Easy Chicken Katsu Curry – another comforting and heart-warming recipe, ready inn no time. 👌
What you need:
- chicken breast mini fillets
- coconut milk
- onion
- garlic
- paprika
- cumin
- cinnamon
- turmeric
- garam masala
- tomato puree
- black pepper
- salt
- fresh coriander
- lime
- sunflower oil for frying
- basmati rice for serving
This is a delicious curry recipe that is easy to make and very popular in our family. The kids particularly love the crispy chicken strips, but who doesn’t?😀
Here’s how to make this lovely Easy Chicken Katsu Curry
Ingredients:
- 400g chicken breast mini fillets
- 1 onion, chopped
- 3 garlic cloves, crushed
- 2tsp turmeric
- 1tsp garam masala
- 2tsp paprika
- 1tsp cinnamon
- 1tsp cumin
- 1tsp black pepper
- 100ml tomato puree
- 100ml coconut milk
- 2tbsp flour
- 2tbsp water
- salt to taste
- sunflower oil for frying
- fresh coriander for serving
- basmati rice for serving
- fresh lime for serving, if wished
Preparation:
- In a heated pan with sunflower oil, sweat the onions and garlic for a few minutes. Add all the spices, coconut milk and about a litre of water and leave to simmer for 15 minutes. Remove from the hob.
- Next, make the chicken. In a bowl, mix the flour and water, season with salt, pepper and a touch of turmeric. Heat a pan with sunflower oil, dip the chicken fillets in the flour mixture and cook them for about 2-3 minutes on each side, until golden. Cut them in strips.
- To serve – in a bowl, add some basmati rice, then curry sauce and the chicken strips. If wished, add some fresh coriander leaves, chilli and lime.
