Happy Thursday guys! Recipe of the day is Crunchy Apple & Cabbage Slaw – packed with vitamins and freshness! 👌
What you need:
- red cabbage
- white cabbage
- carrots Cox apples
- olive oil
- lemon
- salt
This healthy slaw is perfect to accompany any meal – from roasts, fish, sandwiches, wrap and whatnot.
It is also delicious as a salad on its own. Or use it as a base of your salad – add nuts, grilled chicken or fish for more filling and nutritious salad.
It is definitely one of my favourite salads to eat and I make it all year round. And the kids really love it too. 😋
Here’s how to make this beautiful Crunchy Apple & Cabbage Slaw
Ingredients:
- 250g red cabbage, shredded
- 250g white cabbage, shredded
- 2 carrots, shredded
- 2 Cox apples, shredded
For the dressing:
- 2tbsp olive oil
- 1tbsp lemon juice
- salt to taste
Preparation:
- In a bowl combine all the slaw ingredient together. Season wit salt to taste and gently mix everything together.
- Drizzle the olive oil and lemon juice, give it a good mix and serve.
