Happy Wednesday guys! Recipe of the day is Cherry Walnut Muffins – moist, fluffy and absolutely delicious mini bites.
Sadly, the cherry season is over and it seems I can never get enough of these sweet and juicy jewels. I had a small bowl left and it needed to be used.
First thing that came up to my mind was MUFFINS. It’s been a long tome since I made muffins and I know the kids love them. They also joined helping me out with the whisk. 🙂
Apart from the lovely cherries, I added a tiny bit of chocolate and chopped walnuts on top.
They were super moist and fluffy and were gone in a moment.
What you need:
- flour
- sugar
- eggs
- cherries
- walnuts
- chocolate
- vanilla essence
- baking powder
- yogurt
- butter
Here’s how to make these super yummy Cherry Walnut Muffins
Ingredients:
- 280g self-raising flour
- 2 eggs
- 100g cherries, stones removed and sliced in halves
- 2tsp baking powder
- 120g caster sugar
- 120g butter, melted
- 1 cup yogurt
- 50g walnuts, chopped
- 80g chocolate, melted
Preparation:
- Preheat the oven to 180C.
- In a bowl, combine the dry ingredients and gradually add the wet ingredients, whisking constantly.
- Stir in the cherry pieces at the end.
- Bake in the oven for about 25 minutes or until ready.
- Drizzle some melted chocolate on top and sprinkle the chopped walnuts.
