Happy Wednesday guys! Recipe of the day is Coconut King Prawns – jumbo king prawns coated in crispy coconut layer.
I made a bowl of these goodies last week, as a part of surf and turf and all of us seemed to love them. They’re super quick and easy to make and so so tasty.
I served them with chilli fruity dip and a lime wedge. The kids enjoyed them on their own whilst we had quite a bit of the chilli dip. 🙂
I used fresh king prawns but frozen should work just fine.
What you need:
- king prawns
- flour
- an egg
- breadcrumbs
- desiccated coconut
- sunflower oil
Here’s how to make these Crispy Coconut King Prawns:
Ingredients:
- 330g raw king prawns
- 4tbsp breadcrumbs
- 1 egg, beaten
- 3tbsp flour
- 3tbsp desiccated coconut
- salt and pepper to taste
- sunflower oil for frying
Preparation:
- Combine the breadcrumbs, coconut, salt and pepper in a shallow plate. Dust some flour in a separate plate and the whisked egg in a bowl.
- Heat a frying pan with the oil, about 1/3 of the pan at least as you are going to deep fry the prawns.
- Coat them in the flour first, then dip them in the whisked egg and finally, coat them gently into the breadcrumb and coconut mixture.
- Deep fry them for 2-3 minutes on each side.
- Serve them with sweet chilli sauce or any sauce/dip of your choice. They’re delicious on their own too.

Next, I’ve got delicious knot buns with poppy seeds that are just divine. I literally took them out of the oven an hour ago and the tray is halfway empty. The little ones had them with butter and some veggies for lunch. I think freshly made bread is one of their favourite food recently.
