Happy Thursday guys! Recipe of the day is Grilled Peppers, Pancetta & Pork Ciabatta – filling & delicious ciabatta sandwich, perfect for lunch.
This sandwich is inspired by the Spanish Serranito de Lomo, extremely popular in Seville.
This is a really simple sandwich but the combinations of the ingredients work so well together.
It’s also great for picnic once our lives get back to normal I guess. Till then, we can enjoy it in our gardens/balconies.
What you need:
- pork
- pancetta
- ciabatta
- olive oil
- grilled peppers
Here’s how to make this tasty Grilled Peppers, Pancetta & Pork Ciabatta
Ingredients:
- a loaf of Ciabatta bread
- 6 pancetta strips, grilled
- 2 green peppers, grilled
- 120g roasted pork
- 2tbsp olive oil
- olives and grilled peppers to serve
Preparation:
- Heat a griddle pan, slice the Ciabatta bread in half, drizzle with olive oil and gently grill it for 2-3 minutes on each side.
- Place the bread on a serving board/plate. Arrange the pork, then add the grilled peppers and pancetta. Close the sandwich with the other half of the Ciabatta.
- Serve with some more grilled veggies and olives.
Enjoy!
You can use pork leftovers from your roast, pulled pork is the best.
