Happy Wednesday guys! Recipe of the day is Zucchini Lasagna – gooey, cheesey and so so satisfying.
You might think this Zucchini Lasagna is light and not that filling but this is definitely not the case. On the opposite, it is very rich and cheesy. The smell is amazing ( cheese and butter 🙂 ) and simply irresistible. And just in case you’re wondering, we finished it off in a few hours. 🙂
What you need:
- zucchini
- fresh lasagna sheets
- mild cheese
- butter
- milk
- flour
- nutmeg
- salt and pepper
Here’s how to make this delicious Zucchini Lasagna
Ingredients:
- 4 zucchini/courgettes, slice lengthwise and grilled
- 8 fresh lasagna sheets
- 250g mild Cheddar, grated
For the bechamel sauce:
- 100g butter
- 2tbsp plain flour
- 400ml milk
- 1tsp nutmeg
- salt and pepper to taste
Preparation:
- Preheat the oven to 200°C.
- Heat a pan with the butter and flour and start whisking to combine them. Gradually add the milk and continue whisking. If the mixture is getting too thick, add a bit more of milk.
- Season with nutmeg, salt and pepper and leave on a side to cool down.
- To arrange the lasagna – in a baking dish, cover the bottom with the sauce, add a couple of lasagna sheets, arrange the grilled zucchini slices on top and sprinkle generously with cheese. Repeat till the ingredients are finished. Finish with bechamel sauce.
- Bake in the oven for about 20 minutes.
- Serve with some homemade pesto or tomato sauce.
