Happy Friday guys! Recipe of the day is Leftover Easter Bread Cakes with Berries – delicious soft and fluffy mini cakes.
I absolutely enjoy using leftovers. Every time I make a really tasty dish from leftovers I get so much satisfaction and joy. And no one actually could tell that these beautiful little cakes were made from stale Easter Bread/Panettone. 🙂
The recipe is more than simple and uses milk and eggs only and then some chocolate (great way to use up you Easter chocolates) and berries for decoration (fresh or frozen, both work). The Easter bread is already sweet and there’s plenty of butter, eggs and sugar in it, some raisins too.
What you need:
- Easter bread/Panettone leftovers
- milk
- eggs
- mixed berries
- chocolate
Here’s how to make these delicious Leftover Easter Bread Cakes with Berries
Ingredients:
- Leftover Easter Bread(around 250g), cut into small pieces
- 3 eggs
- 200ml milk
- 80g chocolate
- 50g mixed berries
Preparation:
- Preheat the oven to 200°C.
- In a bowl, whisk the eggs and milk.
- Grease a muffin tray, place the Easter bread leftovers in a nd por over the milk and eggs mixture.
- Bake in the oven for about 20 minutes. Take the tray out and leave on a side to cool.
- Meanwhile, melt the chocolate. Use a spoon to drizzle over the mini cakes.
- Arrange some mixed berries on top.
