Happy Friday guys! Recipe of the day is Roasted Leek & Carrot Salad with Balsamic Vinegar and Feta Cheese – sweet, crunchy and filling salad.
I has some lonely leek in my fridge which I need to use up so I came up with this Roasted Veggie Salad. I must admit, I’m the only one in our house that loves leek but surprising this salad was approved by my other half too. 🙂
The sweetness of the carrots, leek and balsamic vinegar goes perfectly with the salty feta and crunchy walnuts. It is a very simple salad but super yummy one.
What you need:
- leek
- carrots
- feta cheese
- walnuts
- balsamic vinegar
- olive oil
- salt
Here’s how to make this simply delicious Roasted Leek & Carrot Salad
Ingredients:
- 2 leeks, sliced
- 2 large carrots, thickly sliced
- 100g roasted walnuts, roughly chopped
- 120g feta cheese, crumbled
- 1tbsp olive oil
- salt and pepper to taste
For the dressing:
- 1tbsp balsamic vinegar
- 1tbsp olive oil
- salt and pepper to taste
Preparation:
- Preheat the oven to 200°C.
- In a baking tray, combine the vegetables, drizzle with olive oil and season with salt and pepper to taste.
- Cook in the oven for about 15 minutes and leave on a side to cool.
- Combine the dressing ingredients together.
- Arrange the veggies in a couple of salad plates. Add the roasted walnuts and feta cheese.
- Stir in the dressing and serve.
