Happy Sunday guys! Recipe of the day is Fluffy Japanese Pancakes – lovely little cakes ,perfect for breakfast, an not only. 🙂
What you need:
- self-raising flour
- milk
- rapeseed oil
- sugar
- baking powder
- eggs
These delicious pancakes are very simple to make. However, they require a bit more time as they are cooked on a low heat. The result is totally worth it though.
I actually doubled the recipe and made quite a few of these thick pancakes. My kids like to slice them in half and top them up with honey and chocolate. I prefer savoury toppings and I quite enjoy them as they are too.
Here’s how to make these Fluffy Japanese Pancakes
Ingredients:
- 150g self-raising flour, sifted
- 1/2tsp baking powder
- 2 eggs
- 180ml milk
- 1tbsp sugar
- 1tbsp rapeseed oil
Preparation:
- Place the sifted flour and baking powder in a bowl and make a well in the middle.
- Add the sugar, eggs, rapeseed oil and mix. Then gradually add the milk whisking the mixture.
- Heat a pan and use a crumpet ring to pour the batter into, about 3/4. Make sure to oil the inside of the ring and spray the pan with a bit of oil too.
- Cover with a lid and cook for about 7-8 minutes on low heat. You should see bubbles forming on the top. Use the lid to turn the ring with pancake over and cook for another minute without the lid.
- Carefully take the pancake out of the ring and repeat with the rest of the mixture.
- Serve with chocolate, honey, berries, butter, jam or your choice of toppings.
