Happy Thursday guys! Today’s recipe is Cheesy Zucchini & Potatoes Bake – really simple but very satisfying vegetarian dish.
Serve it as a main or side dish, hot or cold, it is delicious. I prefer it warm though, as all that cheese is melted and gooey. 🙂
What you need:
- zucchini/courgettes
- potatoes
- mild Cheddar
- dill
- butter
- olive oil
- salt and pepper
- onion
- garlic
- an egg
- flour
- yogurt
Here’s how to make this delicious Cheesy Zucchini & Potatoes Bake
Ingredients:
- 2 zucchini, cut into small cubes
- 2 large potatoes, cut into cubes (same size as the zucchini)
- 1 small onion, chopped
- 2 garlic cloves crushed
- 150g mild Cheddar, grated
- 50g butter
- 1tbsp olive oil
- 2-3 sprigs of dill, chopped
- salt and pepper to taste
For the top layer:
- 1 egg
- 2tbsp flour
- 3-4tbsp yogurt
Preparation:
- Preheat the oven to 200°C.
- Heat a pan with the olive oil and butter and sweat the onions and garlic for five minutes. Add the zucchini and potatoes and pour the water, cover with a lid and leave for about 15 minutes to soften.
- Season with salt and pepper and remove from the heat. Stir in the cheese.
- to make the top layer, simply whisk all the ingredients together and pour over the zucchini and potatoes.
- Bake in the oven for about 20 minutes.
- Serve it with some sour cream or yogurt, if wished.
