Happy Sunday guys! Recipe of the day is Leftover Pork & Biscuits Casserole made with leftovers from my roast, with succulent pork, veggies and all butter and thyme savoury biscuits.
This Leftover Pork & Biscuits Casserole is ready in no time and it’s very delicious and satisfying. My little ones, especially enjoyed the buttery biscuits. I did too!
You could use shoulder, leg, chops or whatever you’ve got left, it all works.
What you need:
- pork
- passata
- flour
- butter
- baking powder
- baby carrots
- potatoes
- thyme
- olive oil
- onion
- garlic
Here’s how to make this lovely Leftover Pork & Biscuits Casserole
Ingredients:
- 200g pork, cooked and shredded (I used leftovers from my roast)
- 150-200g roasted baby carrots and potatoes (leftovers)
- 1/2 onion, chopped
- 2 garlic cloves, crushed
- 50ml passata
- 1tbsp olive oil
- salt and pepper to taste
For the biscuits:
- 100g plain flour
- 50g butter
- 1/2tsp baking powder
- 1tsp thyme
- 1/2tsp salt
Preparation:
- Heat a casserole with the olive oil and sweat the onion and garlic.
- Add the shredded pork and roasted veggies. Pour in the passata and season with salt and pepper. Leave on the hob for about 10 minutes.
- To make the biscuits – combine the ingredients together to make a dough. dust a bit of flour on your worktop and roll out the dough to a centimetre thick. Cut out the biscuits, arrange them on top of the pork casserole and bake in the oven for about 20 minutes.
