Happy Friday guys! Today’s recipe is Oven-Baked Arancini – delicious cheesy rice balls made from leftover brown rice, in my case. 🙂
So I had this container of brown rice in the fridge and I had to reuse it before it went off.
I’ve made these Leftover Rice Bites with chicken before (which by the way are my second most popular recipe) so I wanted to come up with something a bit different.
I know the Arancinis are usually fried but this is my version of them and to tell you the truth they turned out to be super yummy. My kids really loved them!
What you need:
- brown rice
- mild cheese
- thyme
- an egg
- breadcrumbs
- flour
- garlic
- olive oil
- tomato puree
- paprika
- salt and pepper
Here’s how to make these Oven-Baked Arancini
Ingredients:
- 250g brown rice, cooked
- 1 eggs
- 100ml tomato puree
- 50g breadcrumbs
- 100g mild cheese, grated
- 2 garlic cloves, crushed
- 1tbsp dried thyme
- 2tbsp olive oil
- salt and pepper to taste
- 2tbsp paprika for coating
- 3tbsp flour for coating
Preparation:
- Preheat the oven to 200°C.
- In a bowl, combine the rice, egg, seasoning, olive oil, breadcrumbs and grated cheese. Mix well and make small balls.
- In a shallow plate, combine the flour and paprika together. This is where you’re going to coat the the Arancini.
- Arrange the coated Arancini balls on a baking tray lined with baking parchment.
- Cook in the oven for about 20 minutes.
- Serve with a dip of your choice (I served mine with homemade Sriracha mayo).
