Happy Wednesday guys! Recipe of the day is Shortbread Sandwich Biscuits with rich chocolate ganache – an indulgent shortbread recipe that is quick and simple to make.
These buttery biscuits are a firm favourite of ours and as such are gone in seconds. I will definitely double the flour next time as the Shortbread Sandwich Siscuits I made were gone in less than seconds. I was given a feedback that they were simply not enough. 🙂
I’d definitely recommend making a bigger batch! These beauties are perfect with coffee/tea or with milk as my kids have the. I don’t mind having them on they’re own. 🙂 They are super rich, buttery with a silky chocolate ganache centre. Nom, nom, nom. 🙂
What you need:
- flour
- butter
- sugar
- double cream
- chocolate
Here’s how to make these indulgent Shortbread Sandwich Biscuits
Ingredients:
- 150g plain flour
- 100g butter, cold
- 50g sugar
- 100ml double cream
- 100g plain chocolate
Preparation:
- Combine the flour, sugar and butter together, rubbing the mixture till the butter is well incorporated and a dough is made.
- Cover with cling film and place in the fridge for 30 minutes.
- Preheat the oven to 170°C.
- Roll out the dough to 1/2cm and cut small biscuits. Transfer them onto a baking tray covered with baking parchment and bake in the oven for 20 minutes. Leve them to cool down.
- To make the chocolate ganache, melt the double cream and chocolate together. Leave for a few minutes to cool. Spread generously on a shortbread and cover with another on on top.
