Happy Sunday guys! Recipe of the day is Potato Chorizo Salad with Mustard Dressing – quick, easy and tasty recipe for a simple and filling potato salad.
We love a good potato salad in our family. It’s the perfect side for any bbq, fish or roast. I love it on its own and could happily go with it as a nutritious lunch/dinner. It’s super filling and super simple to make, main ingredients potatoes and chorizo. But what makes it special here is the dressing – Dijon mustard combined with sour cream, fresh lemon juice and olive oil. All these flavours go really well with the potatoes. Make it ahead and serve with your roast or bbq.
What you need:
- potatoes
- chorizo
- parsley
- onion
- Dijon mustard
- sour cream
- lemon
- olive oil
- salt and pepper
Here’s how to make this beautiful Potato Chorizo Salad with Mustard Dressing:
- 500g salad potatoes, boiled and cut into cubes
- 50g chorizo, sliced
- 1 onion, chopped
- fresh parsley, chopped
For the dressing:
- 1 heaped tbsp Dijon mustard
- 2tbsp sour cream
- 2tbsp olive oil
- 1/2 lemon, juice only
- salt and pepper to taste
Preparation:
- Heat a pan and gently sweat the chorizo for 5-10 minutes
- In a bowl, whisk the dressing ingredients together
- In a salad bowl, add the potatoes, onion and chorizo. Stir in the dressing and mix well
- Sprinkle some chopped parsley on top and serve
