Happy Thursday guys! Recipe of the day is Raspberry Chocolate Charlotte Cake – definitely one of our favourite cakes ever.
This beauty is so delicious I can’t even describe it! We finished the whole thing in two days! two days, guys! We had it for breakfast, dessert, tea and after dinner. 🤫
It’s smooth, creamy, berrilicious and chocolatey. There’s also a hint of coffee. All of these flavour work perfect together and create this amazing amazing cake. I am in love with Charlotte! 😄
What you need:
- lady fingers
- raspberries
- chocolate
- custard
- double cream
- butter
- eggs
- vanilla extract
- instant coffee
- milk
- brown sugar
- cocoa
Here’s how to make this gorgeous Raspberry Chocolate Charlotte Cake:
Ingredients:
- 500g Lady fingers
- 200g raspberries
- 200g custard
- 600ml double cream
- 30g brown sugar
- 300g chocolate
- 130g brown sugar
- 3 eggs
- 2tbsp cocoa
- 1tbsp instant coffee
- 200ml milk
- 50g butter
Preparation:
- Start by melting the chocolate with the butter and leave on a side to cool.
- Separate the egg whites from the yolks. Add 50g of the sugar in each bowl and mix well. Add the vanilla extract to the yolks.
- Mix 250ml of the double cream to a thick consistency.
- Add the egg yolks to the melted chocolate, then the egg whites and cream. Mix well. Put in the fridge.
- Heat the milk in a pot, together with the cocoa, instant coffee and the rest of the sugar. Stir well and leave to cool.
- In a 24cm round cake tin start arranging the lady fingers, by dipping them in the milky mixture first. Cover the bottom of the tin, add some of the chocolate mousse and raspberries and repeat. Refrigerate for 30 minutes.
- Beat the rest of the double cream with the custard and add on top of the Charlotte.
- Add some more raspberries and place in the fridge. Leave overnight before removing from the cake tin.
