Happy Wednesday guys! Recipe of the day is Raw Vegan Macadamia & Cashew Nut Energy Balls – nutty balls with coconut flavour and chia seeds that are simply delicious.
These pretty energy balls are packed with clean and healthy ingredients.
I have used Macadamia & Cashew Nuts, Carob Powder and Edible Rose Petals which were all gifted from Buy Wholefoods Online.
I’ve also added some chia seeds, coconut oil and honey.
What you need:
- Macadamia nuts Buy Wholefoods Online
- Cashew nuts Buy Wholefoods Online
- Coconut Oil
- Carob powder Buy Wholefoods Online
- Honey
- Edible Rose Petals Buy Wholefoods Online
- Desiccated Coconut
- Chia Seeds
Here’s how to make these Raw Vegan Macadamia & Cashew Nut Energy Balls
Ingredients:
- 200g Cashew nuts Buy Wholefoods Online
- 100g Macadamia nuts Buy Wholefoods Online
- 3tbsp Coconut oil
- 2tbsp Honey
- 2tbsp Chia seeds
For coating:
- Carob powder Buy Wholefoods Online
- Edible Rose Petals Buy Wholefoods Online
- Desiccated Coconut
Preparation:
- In a bowl, combine all the ingredients apart from the chia seeds. Blend them until the mixture is smooth and creamy.
- Stir in the chia seeds and place in the fridge for half an hour.
- Prepare three shallow plates with the coating ingredients – one with carob powder, one with rose petals and the last one with desiccated coconut.
- Take the nutty mixture out of the fridge and using a scoop, make small balls. Coat them in the coconut, carob powder and rose petals.
- Store in the fridge in an airtight container for 2-3 days.
