Happy Wednesday guys! Recipe of the day is Banana Chocolate Mini Cakes – an indulgent treat that is quick and easy to make. ð
These lovely banana muffins/cakes or banana bread muffins ðĪŠ are perfect for Valentine’s day – you could easily make them for your loved ones as a sweet and indulgent gift. ð I’m pretty sure they wouldn’t mind at all. ð
They’re super easy to make and just ideal for when you need to get rid of those too ripe bananas. My kids refuse to eat the very ripe bananas but they love these mini cakes. I’m actually on my way to make another batch today.
For a healthier version, skip the chocolate and add some dried fruit inside. ð
What you need:
- ripe bananas
- butter
- sugar
- eggs
- chocolate
- baking powder
- self-raising flour
- pecans
Here’s how to make these beautiful Banana Chocolate Mini Cakes:
Ingredients:
- 140g self-raising flour
- 140g caster sugar
- 140g butter, softened
- 2 eggs
- 1tsp baking powder
- 2 large ripe bananas
- 100g chocolate, melted
- 12-15 pecans, broken into pieces
- cocoa for dusting
Preparation:
- Preheat the oven to 180°C.
- In a bowl, whisk the sugar and butter until creamy. Add the two eggs and flour and baking powder and whisk again.
- Empty the mixture into a greased muffin tray and bake in the oven for about 25 minutes. Leave to cool.
- Drizzle the melted chocolate on top, add the broken pecan pieces and dust some cocoa.
