Happy Tuesday guys! Today’s recipe is Ferrero Rocher cake – an absolute heaven of chocolate and hazelnuts! 🤤
This cake was requested by my daughters for my birthday. They really made sure their mummy had a cake with candles for her birthday. The Ferrero Rocher candies are one of our favs so the kids instructed me on making such cake.
The layers are made with hazelnuts and chocolate (barely any flour there). Then they’re generously smothered with Nutella frosting. 👌 I wouldn’t say the cake is quick and easy, definitely not. It does take time but it’s not that complex at all. After all, I’m not a baker myself but really enjoyed making it and it turned pretty delicious, I think. 😊
What you need:
- hazelnuts
- chocolate
- butter
- cocoa
- flour
- Ferrero Rocher candies
- Nutella
- baking powder
- eggs
- sugar
- wafers/cones
Here’s how to make the Ferrero Rocher Cake
Ingredients:
For the cake layers:
- 7 eggs
- 100g sugar
- 3tbsp plain flour
- 3tbsp cocoa powder
- 2tsp baking powder
- 180g ground hazelnuts
For the Nutella frosting:
- 300g butter at room temperature
- 150g hazelnut spread
- 250g chocolate
For decoration:
- Ferrero Rocher candies
- wafer/cones, crushed
- chopped hazelnuts
Preparation:
- Preheat the oven to 170°C.
- Sift the flour, cocoa and baking powder together, add the ground hazelnuts
- In a separate bowl, whisk the eggs on a high speed until double in size
- Fold the flour mixture into the egg gently
- Divide the mixture in two and pour into two 8 inch cakes tins, lined with baking parchment
- Bake for about 30 minutes and leave to cool completely
- Meanwhile melt the chocolate and leave till it’s room temperature
- Mix with the hazelnut spread and butter to make the frosting
- Once the layers are cooled. gently cut them in half so you get 4 layers
- Place on a serving platter, spread some of the chocolate frosting and sprinkle some crushed wafers/cones
- Repeat with t he rest but make sure to have left enough frosting to cover the cake
- Decorate with the chopped hazelnuts and Ferrero Rocher candies
- Refrigerate for a couple of hours
- Serve at room temperature
