Happy Tuesday guys! Recipe of the day is Nutella Pumpkin Whoopie Pies – delicious seasonal treats that were gone in an instant at our house. 😀
Pumpkins are amazing! They are so versatile, so delicious and on top of that good for your health. Not only you can make wonderful pumpkin salads, stews, galettes, quesadillas, soups and dips but there’s also the sweet part – moreish cheesecakes, cakes, tarts and pies. What you need to make the Pumpkin Whoopies
- pumpkin
- wholewheat flour
- plain flour
- honey
- sugar
- butter
- egg
- vanilla extract
- nutmeg
- cinnamon
- bicarbonate of soda
- salt
- Nutella
Here’s how to make the Nutella Pumpkin Whoopie Pies
Ingredients:
- 1 cup plain flour
- 1 cup wholewheat flour
- 1 cup dark sugar
- 1tbsp honey
- 300g pumpkin, boiled and pureed
- 70g butter, at room temperature
- 1 egg
- 1tsp bicarbonate of soda
- 1tsp cinnamon
- 1tsp nutmeg
- 1tsp salt
- Nutella
Preparation:
- Preheat the oven at 180°.
- Combine all the dry ingredient in a bowl.
- In a separate bowl, whisk the butter. Add the egg and whisk again. Finally add the pumpkin.
- Combine the wet and dry ingredient together.
- Add a spoon of the mixture on a baking tray lined with baking parchment.
- Make sure to leave enough space between the whoopies.
- Bake in the oven for about 15 minutes and leave to cool.
- Spread Nutella and stick them together.
