Happy Friday guys! Today’s recipe is No Bake Raffaello Cake – for all the coconut and white chocolate lovers! 🙋
It’s really been a long week I am soo looking forward to the weekend. I plan to relax as much as I can and more importantly get lots of positive vibes. I stress a lot when any of my children is unwell (I’m sure everyone does) and after 5 days with high fever, I seriously need to recharge batteries. This, in my case, means cooking up a storm and indulging into delicious food/wine/Netflix. 😆 Luckily, it’s half-term next week (I never thought I’d be so happy) so the plan is to rest and take it easy.
What you need for the No Bake Raffaello Cake
- white chocolate
- desiccated coconut
- Mascarpone
- double cream
- digestive/tea biscuits
- milk
- lemon zest
- vanilla extract
This coconut cake is so so simple to make. As you can guess there are biscuit layers with coconut, white chocolate and cream. There’s no baking involved. However, it needs to be refrigerated over night before serving. I’ve used Raffaello chocolates for decoration but you can use whatever you fancy – cream, chocolate or just leave it with as it is. It really is delicious! I have to admit though, my son did not approve of it. Apparently, he is not into coconut. 🤷 For a 16 month old, he enjoys food a lot and there wasn’t anything he didn’t like so far, until now. 😀 I’ll definitely offer him coconut again though, he might change his mind. Or not. 😂
