Happy Thursday guys! Recipe of the day is Roasted Beetroot Hummus – smooth, creamy and simply divine! 😋
I absolutely love beetroot and once it’s in season, my fridge is always stocked with these colourful and healthy veggies. For my surprise, my kids really enjoy it – they love beetroot chips, raw beetroot salad and beetroot wraps. I love the beetroot salads ( Blackberry & Goat’s Cheese Salad, Sweet Potato & Halloumi Bowl, Meatless Monday: Warm Beetroot & Goat’s Cheese Salad with Honey Dressing, Grilled Chicken, Beetroot & Chickpeas Salad in Spinach Pita/Wrap Bread with Dill Mayo but my newest obsession is this Roasted Beetroot Hummus. 🤤 I’ve been making beetroot hummus for a few years now but I’ve always used boiled beetroot. Not that it wasn’t tasty, but the roasted beet hummus is on another level. There’s definitely a big difference in taste, I think, and I recommend roasting the beetroot with two hands. It just brings so much flavour and makes this hummus Amazing! 👌
Serve it with some crackers, bread, carrot sticks, cucumber sticks, celery or any other veggies you fancy. It is also super delicious in sandwiches, wraps and salads.
