Happy Wednesday guys! Today’s recipe is Peanut Butter & Chocolate Pancake Cake – a delicious cake made with lots of pancakes/crepes!
The kids had requested a cake last week so this is what I came up with. It is really easy and simple cake but… make sure to prep your pancakes in advance. As I usually make mine quite thin, it took me probably an hour to make that amount of pancakes. However, I made them last Friday night and just assembled the cake on Saturday – so much easier and quicker.
I had two fillings – peanut butter, banana & cream and the other one was with Nutella. 😋 I covered the pancakes (very generously as you can see 🤣) in a rich dark chocolate ganache. Don’t get confused about the cherries though, there’s no cherry flavour in the cake itself, I just thought they looked very pretty as a decoration on top of the cake. 😆 I also had some roughly chopped hazelnuts.
I use a pancake maker which doesn’t require any greasing so my pancakes tend to be on the dry side. I had to make sure to spread a good amount of the fillings on each and every one of them. So make sure to take that into consideration when making the cake – are your pancakes dry or not? If you use butter or anything else for your pancakes go easy on the filling, otherwise your cake will become quite heavy and not so yummy.
