Half-term is over and we’re in the final few weeks before the Summer holidays! We are all so excited to have a bit of time off and just enjoying the sun and doing nothing. On the other side, Summer has so much fruit and veg to offer, I have already started planning some delicious recipes to test and eventually share with you. But let’s talk about this amazing roasted pepper dip/spread now..

Homemade Ajvar

I discovered Ajvar a couple of years ago, I believe, and it was love from a first taste. 🤣 And I have recently started making my own so I thought I might share it here. All you need is red peppers, aubergines, garlic and olive oil. Make sure to use the sweet variety of peppers, they’re usually pointed and smell amazing. I simply roast everything together on a tray, season it and drizzle it generously with olive oil, before putting it in the oven, actually. 😃 Then all you have to do is to blitz it to a thick consistency.

Homemade Ajvar Ajvar is so versatile – I use it as a dip with some crackers, it’s perfect as a spread, on some homemade bread with some feta crumbs or as a sauce. It’s really yummy in pasta. I usually make a big jar and store it in the fridge for a couple of days. It’s very convenient on a busy week night, all I do is prep some pasta and stir in the delicious Ajvar. Then add some grated Parmesan and everyone is happy. 👌
