Happy Tuesday guys! Today’s recipe is Mackerel Salad Beetroot Wraps – a colourful and crunchy dish which is not only good for you but super delicious too.
First of all, a bit of disclosure – the beetroot wraps are not homemade, I got them from the shop. A friend of mine introduced me to them and it’s been true love since then. 🤣 They’re super tasty, with a bit of sweet hint which makes them perfect for wrapping up crunchy salads and salty ingredients in general. I’ve also had them on their own, this is how good they are. They’re perfect with hummus and other dips and treats. 🤤 And you know what, the kids love them! They really like beetroot in general (especially beetroot chips) so now wonder. Let’s focus on the recipe now. But honestly, if you see any beetroot wraps, grab them. Normal white flour wraps work just fine.
I’ve used carrots, potatoes, celery, parsley and a bit of my homemade mayo, mustard and lemon juice. The mackerel was leftover so I made these and the Sriracha Mackerel Tacos from my previous post. I even got one more mackerel recipe for you which I will share very soon or not. 🤠You might have had enough mackerel recipes for now. Let’s see..I’ve been meaning to share a dessert recipe but last time I made it, it was a bit of a disaster (taste divine but shape none 🤣) so I need to practice a bit more. Can’t wait!
