Today’s recipe is Sriracha Mackerel Tacos – made with leftover mackerel, beetroot and spinach, these tacos are out of this world! 😋
I hope you guys have had a lovely Easter break and half-term. We’ve had an amazing two weeks off reality and now back to it! I ‘m not sure whether we’ve rested enough but we have definitely had and amazing time and I personally feel so energised and full of ideas for yummy food recipes (a few more mackerel ones) which I hope I can post here soon. 👌

Mackerel is one of my favourite fish but for some reason I haven’t posted a lot of mackerel recipes on the blog which is a shame. However, I have now made three new mackerel recipes which I can’t wait to share with you. I promise, they are super simple and of course, super tasty.
Apart from being budget friendly, mackerel has got numerous health benefits too – omega-3 fatty acids, proteins, minerals and vitamins. Did I sell it to you already? 🤣
This is such a simple recipe but it’s just bursting with flavour. There are three main ingredients – mackerel, beetroot and spinach. You can use hard shell tacos too. I also added some sour cream and fresh lime juice. To be honest, I don’t think they need anything else. They are just perfect as they are.
