When is January over, seriously? It does seem like the longest month. I’m so ready for some Spring weather. 😀 I can’t wait. I’ve had enough of winter jackets and sweaters and of cold weather. But to stay on the positive side, It’s actually been quite sunny which is amazing! Let’s get to the recipe now..
The Pulled Pork Potato Skins are super easy to make and so so tasty. They’re perfect for a quick dinner (may be with a salad on a side) or for an appetizer. All you need is some pulled pork, jalapenos and cheese, and a couple of potatoes, of course. 😀
I always make sure to stock up on potatoes. They’re one of the ingredients I make sure not to run out of. Whenever we’re in hurry or there’s not much food left in the house (which usually happens a day before my weekly shopping is due) potatoes are our saviour. We especially like jacket potatoes with tuna, beans or cheese . They seem to work with everything, really and the kids are happy to eat them too.
Last week, I decided to jazz them up a bit and add some pulled pork which I love so much. 😋 It goes hand in hand with jalapenos (of course 🔥) so I added that too. Also a bit of corn, cheese and sour cream. It all turned so delicious – crispy skin on the outside and cheesy pots with pork and corn. Needless to say they were gone in a minute. 🤣
