Happy Meatless Monday guys! Today’s recipe is Tortilla Bowl Salad – my favourite salad at the moment served in an edible tortilla bowl (the best part!) 😋.

Right, so as I mentioned, tortilla bowls are one of my newest obsessions (one of the many 😃). I love how quick and easy they are to make and the fact that you can fill them in with whatever you fancy really.

For this beautiful salad I used avocado, chickpeas, corn, feta cheese and marinated red peppers. The whole combinations is so yummy and served in an edible tortilla bowl is just delicious! The dressing was fresh lemon juice, olive oil and salt. I’d usually go for some fresh coriander, too but in this case I used some parsley as I didn’t have any coriander.

The Tortilla Bowl Salad makes a healthy and tasty lunch/dinner. I, personally had it for dinner two days in a row and I also made some for Saturday night starter but with different ingredients. You can definitely tell we really love this delicious salad. 👌

If you still have not started making these, well, you should. 😀 I brush an oven-proof bowl with a bit of oil, place the tortilla inside and cook in a preheated oven for about 10 minutes or until desired. Simple as that!
