Happy Tuesday guys! Today’s recipe is Shrimp & Sweet Corn Chowder – exactly what you need in this miserable weather!
21 days till Christmas! Yay or nay? I’m quite excited and a bit stressed to be honest, almost done with the Christmas shopping, jut need to need to finalize my festive menu ( the most exciting part!) and we’re all good to go! 👌 Do you guys roast turkey or goose? Or maybe pork? I think I’m gonna go with a goose again as we all love it so so much but let’s focus on the recipe now..
This is honestly one of the yummiest soups ever. 😋 It’s so comforting and so filling. I’ve used shrimp, sweet corn, double cream, potatoes, peas and carrots. I’ve kind of changed a few things and made this chowder recipe to my liking. Like, for instance, I’ve added more veggies for extra crunch. The potatoes and double cream make this wonderful soup so thick and creamy. The kids absolutely love it too. They call it simply a potato soup . 😃
The recipe is really simple and takes less than 20 minutes. It’s become one of our family favourites as I’ve been making it every week recently, usually on a busy weeknight. Make sure to serve it with some freshly baked bread. 👌 I like to have mine with a generous splash of hot sauce. 🙈
Unfortunately, this Shrimp & Sweet Corn Chowder can’t last long stored in the fridge, probably a day or two. As a matter of fact it lasts a couple of hours in our house. And to be honest, it’s tastiest when it’s hot and fresh.
