Happy Tuesday guys! Today’s recipe is Smoked Salmon & Sun-dried Tomato Monster Sandwich, packed with goodies, this little monster will fill you up for a looong time. 😆
OK, so I actually made this Monster sarnie last Monday and pretty much have been trying to put the post together since then. I know, mum life, right. 🤷 I need to up my organisational skills a bit as the festive season is coming and I’ve got lots of tasty recipes that I’d like to share with you. I honestly can’t wait to create some quick, easy and delicious food and share it on here, eventually. 😃
We had some friends over last weekend hence the leftovers which actually were quite handy for this Monster sandwich. I used smoked salmon (left from some of the canapes I had made), avocado, sun-dried tomatoes, some boiled potatoes, my amazing homemade mayo 😃 and some spinach leaves. I built it up on a wholewheat seeded bread ( I used 4 slices and then cut it in half). Oh, the boiled potatoes were leftovers which actually worked really well with the rest of the ingredients and made this Monster Sandwich even more filling. 😋
This Smoked Salmon & Sun-dried Tomato Monster Sandwich can easily feed a couple of people. It is really that huge. Unfortunately, I don’t recommend storing it in the fridge for more than a few hours. It’s at its best when it’s fresh due to the ingredients it’s got. You know how avocado gets really dark when left aside. Also, smoked salmon is not very pleasant, if not fresh.
