Happy Friday guys! Today’s recipe is Spicy Tuna Avocado Salad – one of my fav salads lately, it will fill you up and wake up your senses. 🔥😆
Right, let’s start with the ingredients – tinned tuna, ripe avocado, lots of fresh parsley, red onion, fresh chillies, hard-boiled eggs. The dressing is fresh and simple – lemon juice, olive oil and salt.
This is a really convenient salad, meaning simple to make. I usually have the above ingredients all the time, no matter what, and I’m assuming most of you do. I usually make it the day before my grocery shopping is due, as there’s not much choice left. Obviously, the kids stay away from it. These red chillies are soooo hot, even for a spicy food lover like me. But I just love how they change the whole salad, they just gave ‘life’ to it. 😆 Of course, you can always skip them or try adding some milder tasting chillies.
The Spicy Tuna avocado Salad can be stored for a couple of days in the fridge, so it’s perfect for lunch at work or delicious and healthy dinner.
The recipe makes around two salads. However, I gobbled down the whole thing by myself. 😃 It was just so delicious I couldn’t really stop and the fact that it was all in one bowl was so convenient. Why not just finish the bowl? 🙂
