How’s your half-term going? Mine quite quickly, to be honest. I can’t believe it’s already Wednesday! We’ve already got plans for the rest of the week so we’re good to go. 👌
About these Sweet Potato & Seeds Muffins..
As much as I love sweet stuff (chocolate in particular) I prefer making and eating savoury muffins. You could probably tell if you follow my blog, I’ve got a small collection of savoury muffins which are absolutely delicious (I’ll leave the links below). My kids seem to enjoy them too so it’s a win-win situation. 😀
For this recipe I used a bit of flour, an egg, mature Cheddar cheese, yogurt and sunflower oil. Well, obviously, some sweet potatoes and seeds. I had a mixture of sunflower and pumpkin but you can use whatever seeds you fancy. However, I think, these muffins are really yummy with pumpkin seeds.
The result is super moist and cheesy bites that disappear too quickly. I tend to start eating them as soon as I take them from the oven and quickly halve them before they’ve actually cooled down. 🙈 But this is me, I recommend to wait a few minutes before serving them. Unfortunately, they don’t last long, no more than a couple of days, so make sure to enjoy them while they’re still fresh.
