Happy Tuesday guys! Today’s recipe is Super Pumpkin & Halloumi Salad – healthy, crunchy & tasty and one of my newest obsessions!
It seems Pumpkin season is at its peak now. 😆 By the volume of the pumpkin recipes posted each day I bet people consume lots of pumpkin. 🤣
I myself could barely wait till the first of October to start with the pumpkin recipes! 🤣

Right, back to this beautiful salad now. I used roasted red onion, crispy halloumi, pumpkin seeds, spinach and pumpkin, simple as that. Let me tell you, this salad is quite filling and could easily go as a main, which makes it perfect for a healthy lunch. It’s ideal if you’re meal prepping, you could simply make a couple of containers to have as your lunch/dinner.
I made a creamy parsley dressing with some rapeseed oil, salt and lemon juice (I simply blitzed everything together). You could skip the parsley if you’d like but it adds so much flavour to the salad. I think parsley is the herb I use all the time on almost everything – fresh salads, stews, soups, everything really apart from the sweet stuff. It might work though, who knows? 🤔
