Happy Wednesday guys! Today’s recipe is Sweet Potato & Halloumi Bowl – with chickpeas, roasted red onion and fresh mint – seriously tasty!
It seems, as Summer is almost over, I am using more and more root veggies and Fall produce in general. I actually have beetroot almost every other day. I can’t get enough of it. One of my favourite salads with beetroot is with grated beetroot, grated apple, grated carrot and walnuts. Yum. Of course, I also enjoy the beetroot-goat’s cheese combination too. 🤣 Also, the beetroot hummus is not only trendy and good-looking but delicious too. Try it for yourself. Right, let’s focus on today’s recipe though..
I love making this kind of bowls, some people would probably call it a salad, not sure, but whatever you call it, it’s super tasty. I actually found a new way to prepare the halloumi which as you can guess is DELISH. 😋 I cut it into small bites, drizzle a tiny bit of olive oil and roast it in the oven for a few minutes. The result is crispy halloumi bites, perfect for adding into salads or bowls like this one. 😃
Apart from the Amazing halloumi cheese, I added some sun-dried tomatoes, chickpeas, roasted red onion and fresh mint. The dressing was olive oil, salt and lemon juice. Simple, but perfect for this flavoursome bowl. Make yourself a bigger batch, store in a food containers for a few days in the fridge and enjoy as a tasty and healthy lunch/dinner. Nom nom nom. 😋 Throw it into green salads or even have it as wrap filling. 👌
