Happy Wednesday guys! Recipe of the day is this fantastic Blackberry & Goat’s Cheese Salad – so much flavour in just one dish!
I feel that I have not made many recipes with blackberries, quite few to be honest (try the Blackberry Chocolate Chip Pie 😋 ). That doesn’t mean I don’t fancy them. On the contrary, I really enjoy munching on them, but they taste so delicious combined with some savoury ingredients (goat’s cheese here) so it’s a must to try this salad. Not to mention the health benefits. And to make this salad even healthier I’ve added some thinly sliced beetroot.
I’ve used some green leaves as a bed, chopped walnuts and goat’s cheese. It goes amazing with the rest of the ingredients so I don’t recommend substituting it. However, I know there are people who are not keen at all and really can’t stand the smell even, so if you’re from them, try using some crumbled feta cheese instead. But seriously, goat’s cheese is tasty. I myself, am not a big fan but combine with some ingredients it is delicious.
As a matter of fact, every time there’s a beetroot salad, inevitably there’s a goat’s cheese. The cheese really compliments the beetroot though and goes so well with it. Anyway, let’s go back to the recipe and see what we need to make the salad.
