Happy Wednesday guys! Today’s recipe is Quick & Easy Shrimp Burrito – super simple and very enjoyable for the kids (mine love building up their own burritos).
I’ve used some cooked shrimp (how convenient 🙂), lime and cilantro rice, freshly made guacamole, freshly made Pico de Gallo, sour cream and hot sauce for the grown-ups. It seems I’ve only prepared the guacamole, rice and salsa. All simple and quick to make. Make sure to get yourself some fresh coriander and lime though. Also, some red and white onion for the salsa and guacamole. Cheese and salad are optional. I usually add them too but this time decided against it just for a change. However, the kids had quite a lot of salad, that’s been their new favourite thing recently which I don’t mind at all. 😀
I also love serving these with some sliced fresh jalapenos and extra lime wedges. Unfortunately, I didn’t have any jalapenos so I had to compensate with lots of hot sauce. 🔥 After all, this is all Mexican-inspired, right?
As I’ve mentioned before my kids love having these burritos/wraps as they get to choose their own ingredients. This is what I do – I simply make a few burritos for the grown-ups and then prepare small bowls with all the ingredients and a few wraps. I’m telling you, they get really excited and it’s so much fun! They’re not to keen on the guac but I’ve actually noticed a progress since the last few times so that’s all good, we’re getting there! 😂
