Happy Friday guys! Today’s recipe is Sweet Potato Taco Bowls – healthy and nutritious and absolutely delicious tacos! And perfect for Cinco de Mayo!
OK, I must admit, the kids were not a big fan of these. I mean, they liked the sweet pots, tortilla chips and taco shells but they had them separately, not in a taco which I suppose was fine. They still had their food. We (the grown-ups) loved these. Such a simple and yet so delicious and healthy dinner it was. And not that I’m showing off, but everything was made from scratch. It really makes such a difference, so if you guys could make your own guac and pico, it only takes a few minutes.
Also, these are perfect for entertaining your guests. I would probably add some carnitas, grilled chicken, chopped jalapenos and hot salsa, place everything in different pot so everyone could make their own taco – such a fun and tasty way to feed your friends! I’m also thinking some Margaritas..:) After all it’s the bank holiday weekend here and guess what? The weather is supposed to get hot hot hot which is not very usual so I’m looking forward to the weekend!
I used these soft shell taco bowls for the first time and I really liked them. There are no different from the soft flour tortillas I usually get for wraps and burritos (in taste) but It was like serving a taco salad in edible shell, kind of. 🙂
As you can see the ingredients are super simple, everything takes a few minutes but is sooo tasty!
