Happy Tuesday guys! Today’s recipe is Salted Caramel Panettone Muffins, made with leftover panettone & a thick layer of salted caramel!
It’s another leftover recipe but seriously, who likes throwing away food, especially panettone. Not me! This is one of the easiest and simple leftover muffin recipe and still it tastes like you got them from your local bakery. They’re really delicious in combination with some slated caramel. Nom nom nom!
It seems I’ve been posting quite a few leftover recipes lately but I always try to use up all of my food. Thus I come with quite tasty ideas (well not all the time). Sometimes though my attempts are a complete disaster but they rarely end up in the bin. My point here is to be creative and use up your leftovers. Not only you won’t throw your food away but you can come up with recipes that your family would love. 🙂
Right..Let’s go back to these lovely mini cakes now.
All I used was some eggs, milk, baking powder and a tiny bit of sugar. The panettone was quite sweet and the layer of salted caramel added extra sweetness. For the salted caramel I simply used sugar and sea salt. Simple as that!
I must warn you though, these bite-sized muffins are gone quickly. I managed to finish a few as soon as I took them out of the oven. The kids loved them too and even asked for more. 🙂 That might be due to the tiny chocolate bits in the panettone.
