Leftover Lamb & Roasted Vegetables Wraps

All I’ve used was leftovers. Seriously, everything apart from the sweet chilli sauce. 🙂 I had roasted leg of lamb and veggies for Easter.But as it always happens we were so full with canapes and appetizers that we could barely taste this beautiful lamb. Well, we did on the next day, actually but still had some leftovers. I had also made some roasted carrots, zucchini and red onion. Basically, I had to come up with a tasty idea to use up this delicious leftovers. 🙂 And I believe I managed, at least all the food was finished and nobody really complained. 🙂

Another great alternative to use up some roasted lamb is to make a soup. Simply add a mixture of fresh vegetables and serve with some homemade bread for a finger-licking meal.

For the base of the wraps I used Baba Ganoush. I love lamb and eggplants in general, I think the combination is just perfect so I gave it a go in the wraps and honestly, it was more than perfect. Again this eggplant dip was leftover, only a few spoons left but enough to compliment the lamb. 🙂 We had the wraps for dinner but they’re also really handy on the go (especially if you know how to wrap them up properly :-), just saying). Well, I’ve definitely learned that from my experience in a Mexican restaurant and few other tips probably. 🙂
